GUYS. Guess who's back from vacation and back into cooking up homemade tasty meals?! I had such an amazing trip and if you follow me on Instagram, you probably got to see your fair share of it! Mountain, lakes, country side & cities. I had the best of all worlds this vacation from adventuring the highlands of Scotland, to exploring & shopping in the city of London.
I'm excited to say I'll be starting a separate column where I'll be posting food reviews from restaurants I've eaten at and LOVE! And they will only be positive ones so it won't waste your reading ;) Stay tuned!
SO to kind of brief you on one, we went to this place in London for brunch called "Daisy Green", and if you saw my post last weekend, you were probably drooling! It was an Aussie style restaurant cafe with the greatest food. Seriously so good we went 2 days in a row. Anyhow, we ordered this coconut French toast smothered in berries and topped with fresh yogurt. It literally tasted like a dessert but it wasn't loaded with sugars or syrups, and it was just SO RIGHT.
Naturally, I had to try to mimic this at home. Duh. If I couldn't bring myself to London for breakfast everyday, I'd have to bring the London breakfast to me (and Ryan too. He was Daisy Green obsessed).
So please see my version (inspired by this original recipe) of a coconut bread, loaded with bananas and all the best coconuty flavors! Not fried, pretty healthy- all around a switch up of our normal breakfast! Plus we've been eating it everyday for the last week so I promise it's that good.

I N G R E D I E N T S:
- 3 super ripe bananas, mashed
- 2 eggs
- 1/2 cup of Coconut oil, melted
- 3/4 cup of cane sugar
- 1 1/2 cups of flour
- 1/2 cup of plain greek yogurt
- 1/2 cup of unsweetened shredded coconut flakes
- 1 tsp of Baking soda
- 1 tsp of Vanilla extract
- 1/2 tsp of Salt
BEGIN: Start by simply preheating your oven to 350° Fahrenheit. In a mixing bowl, add your coconut oil & sugar and mix well to combine. Next, add your eggs and vanilla, and whisk all together. Now slowly add the flour, baking soda & salt to your wet mixture and mix together until smooth. Still so easy, right?!
BAKIN: Once everything is mixed well, add in your bananas with coconut flakes and yogurt. Fold so everything is totally combined and there aren't really many lumps. It's okay if there are some from the bananas but try your best to make this quite smooth! In a greased bread tin, pour in your banana coconut batter. I added some additional coconut flakes to top, but your call! Bake for about 60-70 minutes, but check on it occasionally incase yours cooks a bit faster. You don't want it to burn! To see if it's done, stick a toothpick in it and if it comes out clean, you're golden.
SERVE: Once it's done, let it cool & DIVE IN! I served mine with some greek yogurt, honey, and freeze dried raspberries. S'GOOOOOOD.
