Guys. This is SO good! Like so so tasty! I know I say that about everything I post, but this is a dish i'd never think to make, and I am oh so happy that I did! It's just so creamy, BRIGHT(!), and refreshing. Think of your favorite tomato with garlic and oil mixture.. Now add a light brie cheese and some fresh basil.. toss with some pasta! MMMM
So this was actually made yesterday down at the Institute of Culinary Education, where I took a food styling class with Food52! It was the best day ever! I was able to learn a billion and one tips and tricks when presenting the food you cook, along with actually making start to finish, 3 dishes! Above photo was one of them that was prepared and styled by my new friend Meryl & I. Doesn't it look AMAZING!?!!

Back to this beauty- I couldn't believe how easy it was and do not know why I never heard of this recipe before. It was seriously thrown together in minutes.. MINUTES (well minus cooking the noodles obv)! Since we only had a certain amount of time to prepare and style, it wasn't able to sit for the 2-8 hours this recipe requires. But no biggie! Still came out just as good ;)

I N G R E D I E N T S:
- 1/2 pound of pasta (preferable Curly pasta, like this one!)
- 2 ripe tomatoes, diced/cubed
- 1-2 cloves of garlic, minced
- 1/2 pound of Brie, cut into cubes
- large bunch of fresh basil
- 1/4 cup + 1 Tbs of Olive Oil
- Salt & Pepper to taste!
TOMATOES: Start by putting your Brie in the freezer for about 20 minutes, just to get firm. While that's freezing, chop your tomatoes by hand and put them in a large bowl. Mince your garlic and combine well with your tomatoes. Next, chop your basil finely and now add that to your tomato-garlic mixture. Pour in your olive oil and a good amount of salt & pepper. Stir well so all the tomatoes are coated evenly and the flavor is just all over. JUST so good!
BRIE: Take your brie outta the freezer and cut into little cubes- about 1/2 inch in size (PS, leave the rind on it!). Toss in with your tomato mix, combine well, cover & let it sit anywhere from 2 to 8 hours. The longer it sits, the creamier it will get! NOW, in the above photo, mine only sat for about 20 minutes, so it wasn't as creamy. If I had more time I would have, but this is up to you!
PASTA: When you're ready to eat, cook your pasta! Drain & fold in your creamy tomato mix. Serve right away and voila!
*Notes: Since I made this during a food class, mine dish didn't get to sit for the full few hours. In this case, I put my finished dish back on the stove at the verrrrry end & heated over medium heat, for only a few minutes until cheese got a little melty. BAM! There it is!
