*No piggies were harmed in the making of this 'bacon'*
Hello & happy hump day! You made it half way through the week- one day closer to the weekend! To celebrate the weekly slump day (and probably feeding into your laziness) (no pun intended) here's a super simple way to make vegan bacon! YES. It's true! And absolutely none of that "fake meat alternative" nonsense either. Straight up coconut flakes that can replace your fav bacon recipe, and you'll be saving a piggie, or two!
I'm not going to lie and say this is like exactly the same as bacon, well, because of course it isn't. But still SOOOO good. It actually makes me more happy it's not a total mimic of the real deal because if you know me well, you know how piggie OBSESSED I am! They have been my favorite animal since I was a kid, and even before I was a vegetarian, I still wouldn't eat bacon. If I did have an occasional BLT, it was always with turkey bacon (save all the pigs!). And if you know me really really well, you know one of my life goals is to actually own a piglet the day I have my own house. I mean, come on- they are so dang cute!
So anyway back to this fakin' bacon. I would see recipes from time to time on how to make bacon alternatives and to be honest, they never really caught my attention- I was just never a huge bacon fan. But when I stumbled upon this recipe, I knew I had to try it. Plus, I never had liquid smoke and I was intrigued to try for myself! These lil flakes are seriously so so SO easy, and take in total maybe 10 minutes start to finish. THEN, you can totally throw them in a mason jar and freeze to preserve the crunchiness, and have them whenever you prefer. Chuck em on a veggie sandwich to give it some extra flavor (like I've been doing basically everyday since), or over a salad, donut (mmm), etc. Let your creative flag fly!

I N G R E D I E N T S:
- 2 Cups of large coconut flakes (unsweetened)
- 2 Tbs of Olive Oil
- 2 ½ Tbs of Soy Sauce
- 1 Tbs of Liquid Smoke
- 1 Tbs of Sriracha
MAKIN THE "BACON": Preheat your oven to 350° Fahrenheit. In a small dish, combine all your liquidy ingredients. In a large mixing bowl, dump in your Coconut flakes and pour your slurry sauce over them. Toss to coat evenly!
BAKIN THE BACON: Lay out your coconut flakes flat on a baking sheet or parchment paper. Cook for about 8-10 minutes, flipping the pan half way through to make sure all cooks evenly. CAREFULLY watch them to make sure they don’t burn. Mine only took 8 minutes. Once they begin to darken and look like a bacon-y color, remove and let cool. Once they chill out for a few, they’ll be super crispy! ENJOY!
