crispy, chewy, shiitake bacon!
Happy Humpday guys! I just got back from my extra long weekend In Florida, and I am reeeefreshed! Nothing beats a few days with my mom, sisters, Ryan + puppies, in the sunshine and gorg weather. Did I want to come home so soon? Um no. But am I excited to share this UHMAZING "bacon" recipe with you? Yesssssir!
If some of you have been following my page or recipes for a bit, you'll remember my recipe on coconut bacon. Another delish replication of everyone's obsession. But I have to say, THIS recipe is it. Like stinking good. It tastes so much like the real thing, you won't believe your taste buds!
I have to say, one of my favorite things about [vegan] cooking, is when a dish comes out so successfully good and you are actually wowed by the flavors packed in such a veggie loaded dish. No additives. No meat. Just you, your veggies + some spices. I swear it feels like magic when you nail that dish you're trying so hard to achieve. Who else can relate?! Like this shiitake bacon- I made everyone a "B"LT this weekend with my newest shiitake bacon obsession, and my sister Sydney couldn't believe how much it tasted just like a crispy burnt piece of bacon. Mind was blown.
So I really hope you'll try this at home. It takes a few minutes to prepare, pop it in the oven until brown, and BAM. You'll have yourself some just-like-real-bacon, bacon! And without harming and single piggie :) OOOOOH and you must, must, MUST add this 'Just Mayo' Chipotle Mayo. Golden.

I N G R E D I E N T S:
- About 10 pcs. of Shiitake mushrooms, sliced into 1/4" pieces
- 1/2 tsp of Sea salt
- 2-3 Tbs of Olive oil
- Pinch of Black pepper
- Fresh loaf of [homemade] bread
- Tomatoes, lettuce, onions + vegan mayo
SHIITAKE BACON!: Preheat oven for 350 degrees Fahrenheit. Slice up your mushrooms & toss in the olive oil, sea salt + pepper. Let it sit in the bowl to marinate while the oven is preheating. Once hot, spread them out on a baking sheet or parchment paper, and cook for about 30 minutes, tossing every so often. Cook until they are pretty browned, and almost burnt looking. They will crisp up more as they cool.
ASSEMBLE: Take 2 peices of bread, and spread on some vegan Mayo. Top with tomatoes, red onions, lettuce & your fab crispy bacon. ENJOY!
*Notes: I have a gas oven, so mine cooked in 30 minutes. However, when I was at my moms and used her electric powered oven, it did take a bit longer. Just check every now and then and cook until desired. :)
