Hi There! Have you ever had yourself a super thick and super chocolatey hot cocoa? UGH. The days are toooo long ago when I remember having a hot cup of Max Brenners Italian Hot chocolate while shopping around Bryant park. I kid you not- probably the most chocolate packed thang I've ever indulged in. So rich and luscious, all in a little cup. WAIT. No, that's a lie. Another great classic Hot cocoa can also be found at The City Bakery. They're known for their cocoa, and literally have a month dedicated to just different flavors daily. Topped with their signature homemade marshmallow to top. Droooooooooling. (Note to self: OK, why did I give up milk again? ugh. RESIST).
I'm obviously missing these days, and since the cold weather has hit, I'm reaaaallly craving it, and need a HOT drink! Surprisingly enough [in this fast paced, nonstop city], I don't actually drink coffee. I don't like the taste of it, and I try to avoid a huge amount of caffeine at a time. So when I wake up and I'm super sleepy, I just have to pray I snap out of it before I get to work, because there's nothing I can rely on to wake me up.
But, that doesn't mean I don't enjoy a hot cup of tea or cocoa before bed with a small snack. I know. So greedy. But what's better than slipping into bed after a long day, all showered & cozy, with a HOT cup of hot chocolate, smothered with little fluffy marshmallows on top- AS I watch the office?! Not much! Which is why I had to share this creamiest recipe with you, taken from My Sequined life. I have been on the hunt for the perfect cup of hot cocoa for months, and I have finally found it. I N G R E D I E N T S:
- 2 Tbs of unsweetened cocoa powder
- 2 Tbs of cane sugar
- 3/4 cup + 1 tbsp Almond milk, divided
- 2 tsp of cornstarch
- 1/4 tsp vanilla extract
- Pinch of sea salt!
- Dandies Vegan Marshmallows, to top (optional but SO NEEDED!)
SIMPLE THICK COCOA: In a small saucepan over medium-low heat, add your cocoa powder, cane sugar + sea salt. Whisk in 3/4 cup of almond milk until combined. While that's heating up, add your cornstarch and remaining tablespoon of almond milk to a seperate small dish and whisk to make a slurry. Now jump back to the hot cocoa mixture- it should start to boil soon, so make sure to whisk quite frequently. Once it comes to a boil, slowly pour in your cornstarch mixture while whisking. Once all incorporated, reduce heat to low and let simmer while whisking for just a few minutes (or until desired consistency). Remember as is cools, it will thicken up more! Kill the heat and add the vanilla. Serve with a generous amount of marshmallows, and enjoy! The perfect little cup of thick & rich cocoa. mmm
