Hi there! And happy Friday! Looking forward to another weekend of relaxing and seeing family + friends, especially after my trip last week. Does anyone else ever need a vacation, after your vacation? I don't know what it is, but I'm extra tired, sleeps been all over the place, and I just feel like I need to unwind.

To recap: we started our trip in London for a few days in the cutest little house in the mews of Kensington. It was actually a dream. Then, went off to Paris for 3 too quick days, which may possibly be my new fav city. And we ended our trip in the beautiful England countryside, in a little village outside of Ramsbury. Have you seen the holiday? If so, that's exactly what it was like, except 10000x better. I'm ready to pack up and ditch NY forever!
Anyhow, I'm back now and super excited about all the recipes I have lined up to share! Like this classic BLT! Now I've done veggie BLTs before, but this tempeh recipe really takes the cake. There are SO many bacon tempeh recipes floating around the Internet, but I really feel this one is a home run. It's smokey, weirdly bacon-y, and the comfort you need as Fall weather creeps in (finally). Enjoy!
I N G R E D I E N T S:
8oz. packet of Tempeh
3 Tbs of soy sauce
2 Tbs of pure maple syrup
1 Tbs of liquid smoke
1 Tbs of water
1 tsp of paprika
1 tsp of sriracha
Bread, Tomato, Greens, Avocado, Red onion + sprouts, to serve! (with vegan mayo obv ;) )
PREP: Slice your tempeh long ways, but very thin. I find it better to have long pieces of “bacon” rather than the small little ones that get lost in the sandwich! In a small bowl, combine all liquids + spices above, and stir well. In a large wide bowl, lay your tempeh side by side, and overlap if needed. Pour the slurry over it, and let marinate in the fridge for at least 20 minutes. However, if left overnight, the flavor is even better!
COOK!: Once ready to cook, heat a large non stick pan over medium high heat and add a tiny swish of olive oil. Once hot, place the tempeh in side by side (you’ll have to do in a few batches). DO NOT pour in the marinate here! Flip after a few minutes, once the bottom begins to turn golden. Once flipped, spoon/brush some of the left over marinate over each piece. Cook until browned, and flip oneeee last time to crisp on both sides and brown completely. Repeat until all pieces and marinade is done!
Assemble to make the perfect sandwich, or use on a salad, or even aside Tofu Scramble!
