served warm or cold- the slurpiest of nooooodz
Hello Monday! It's been a while, and I've had quite the recipe-writers block situation going on. I find myself making the same dishes, or trying some new thangs I just don't love. And if I don't love it, it aint going to make it here. Can someone share tips on staying consistent with recipe development?! Anything is appreciated! <3
BUT these noodles. wow wow wow. Do you ever have a dish thats not too spicy, and has just the right amount of spice? Like juuust enough that it hits the back of your throat, but you aren't guzzling water as you nearly choke on the love of spice?! I personally have a hard time finding the balance between the two. These noodles are IT though. Promise. So creamy, loaded with the almond protein, literally comes together in 10 minutes TOPS, and the perfect weeknight meal.
If you're a fan of a peanut noodle sauce (which to be honest, I never was until recently), you're going to love these even more. I decided to switch things up a bit because I had my favorite jar of Trader Joe's raw Almond Butter on hand and I wanted to get creative. In Chloe Coscarelli's new cookbook (LOVE), she shared her Peanut noodle recipe. I was so inspired to try something similar and came up with this delightful dish.
Oh wait wait.. did I mention how great of a meal this is to bring to a pot luck?! We know there are pleeeenntty of those this summer, and luckily for you, this could be prepared the night before and served completely chilled. Last minute plans? Done & Done. Bring some sauce on the side, toss in to loosen up and you're good to go.
I N G R E D I E N T S:
- 10-12 oz of Whole wheat spaghetti noodles (or soba/ramen!)
- 1/4 cup of Almond butter
- 1/4 cup of Tamari
- 3-4 Tbs of Rice vinegar, to preference
- 3 Tbs of sesame oil
- 2 Tbs of brown sugar
- 1 Tbs of Sriracha
- 1 clove of garlic
- 1 inch knob of ginger
ALMONDY NOODLES: In a large pot, bring water to a boil and cook the noodles. Once cooked, drain and set aside. At the same time as that, add all remaining ingredients into a high speed blender. Blend until super smooth. Toss the sauce with the pasta as desired- you may find yourself with extra sauce or extra pasta depending on how saucy you prefer your pasta, so test it with a little at a time. Serve warm or cold with crushed almonds and red pepper flakes! SO GOOD.
