one of life's most simple pleasures
Hi there, Monday! What a nice relaxing weekend. One of those weekends you just need from time to time, where the only thing on your list to do is catching up on shows, napping (a ton), and eating breakfast at 2pm. But, I'm finally ready for ya, week!
So, I'm writing this as I watch The Office. If you know me, you KNOW my obsession with this show. I might be a little behind on the trend of this show as it literally aired in 2005, but I can say I've seen every episode at least 10 times. Thank God my friends convinced me to start this about a year or so ago, and I have been hooked ever since. Every time I end the series, I start it right from the beginning again. And the parts I find the best, I rewind and laugh at just as hard as I did the 5 times before. Does anyone else have a show that they watch so much and still enjoy it as much as the first time?! Team Dwight forever <3
Anyhow, a good hummus has been on my list to make for waaaay too long. Ever since I've been to Scotland for the first time, Ryan introduced me to Marks & Spencer's EVOO Organic Hummus. WOW. It's so perfect, and to be honest, my absolute favorite hummus of all time. I've still never had a hummus to match it's perfection since, and have yet to find one in the US that replicates it's spot on flavor and texture. SO, why not try to re-create it at home? BINGO. It's been done. I mean.. OK. Not exactly the same, but to me, it's as close as it will get to the real deal. AND I don't have to travel 3,000 miles to pick up a container. ;)

I N G R E D I E N T S:
- 1 can of garbanzo beans, drained and rinsed
- 1/4 cup of tahini
- 1/4 cup of fresh lemon juice
- 1 large clove of garlic [or 2 small]
- 3 Tbs of extra virgin olive oil
- 1/2 tsp of sea salt
WHIP IT UP: In a food processor or high speed blender, chuck in all of the ingredients. Blend up until smooooth and creamy, and adjust to taste as preferred. I enjoyed mine with some homemade flatbread!
