FRIDAY! Happy happy Friday! Nothing feels better than the weekend upon us during the warmest days of the year, and the weekend is entirely ahead of us. Picnic, plz!
Hows June been going for ya? If you follow my instagram, you'll know Ryan & I just came back from Cali and loved every second of it. OOOOH and Erewhon- the grocery store of my dreams, organic food Heaven... dare I say better than Whole Foods (insert shocked emoji here). When we first stumbled upon this shop, I thought we'd be going in for a quick bite, only to learn this was by far the best shop I've ever been in. If you really know me, you KNOW the happiest parts of my day are spent food shopping at Whole Foods, where I can seriously spend hours. Certainly I can't be the only one that does this! I'm having serious Erewhon withdrawals and my heart kind of broke a bit as I had to say ta-ta to it. But, anyhow- I think there might be a post to come soon of some of my favorite places to eat in LA. SO stay tuned!
So, the simplicity of rice + beans. Two of my favorite things to eat, together as one <3. Most of the times I've eaten this classic combo, was usually served as a side dish and I always wish I could just have a bit more. Why not just make it with a TON of toppings, in a massive bowl?! And why did it take me so long to discover this could be an actual full meal? I feel I've deprived myself of this big ol bowl of goodness all these years. But not anymore ;)
OH and the Instant Pot. Another thing I feel I take for granted 99% of the time. Can we just talk about how friggen easy they are to not only use, but how much easier it makes your life, and it's quite literally a 2 second clean up? I don't know why this amazing contraption sits on my shelf and collects dust most of the days. Buuuuuut thankfully, the talented Pinch of Yum inspired me to it clean off, chuck in the ingredients I've already had on hand, and came up with this!
This dish took a tonnnnn of trial and error. I must have remade this at least 5-6 times before perfecting, and I'm happy to finally share it with the internet world! Give it a go, and have a LARRRGE bowl. You won't be disappointed ;)

I N G R E D I E N T S:
- 1 cup of long grain brown rice
- 3/4 cup of salsa
- 1 (15 oz) can of black beans, drained + rinsed
- 1/2 tsp of each: cumin + chili powder
- Dash of garlic powder
- Small splash of olive oil
- Salt + Pepper, to taste
COOK!: In your Instant Pot, add rice, salsa, spices, olive oil, pinch of salt and 1 cup of water. Mix well, close lid, and select rice option- set/cook for 22 minutes. Hit Start and let it coooook! Once its finished, let the pot sit for an additional 10 minutes before releasing remaining pressure. Open, mix well and add the drained beans. Adjust to taste with salt + pepper. Serve as is, or top with my fav ingredients which include... avocado, vegan sour cream, fresh liiiiime juice (a must!), cilantro, and jalapenos. YUM.
*Notes: If using white rice, you may need to cut the time down by a lot, but I haven't tried it. If you do, let me know!
