Happy Friday y'all! I don't know about you, but this week has been a loooong one. I think it may have to do with the fact I just came back from vaca late Sunday night, and I was back in the swing of things Monday morning. Lucky for me, I actually really enjoy my job, so coming back to work after the most lovely trip away, really wasn't a struggle on Monday morning. Win Win!
SO, if you follow my instagram (and if you don't, plz do so now. worth it) you would have seen the highlights of my trip to Cali last week, AND the few photos posted currently of the most delicious food I ate while I was there. I maaaay do a post on some of the best restaurants I ate at, but still trying to get my list of favs together. Stay tuned!
Anyhow, if you're in the LA area, or planning on traveling there in the near future... WOWWWWW. The food there is seriously bomb delish. I know I said the same thing about my trip to Mexico (and probably Turks and Caicos for that matter), but LA Vegan dining is out of this world. Everything is so fresh, ALL organic, and the variety is insane. I swear Ryan and I ate more than we should have every single day, and when we were full, we would still manage to squeeze a treat in.
Aside from the food, we had the best time in the world. I know California may not seem like the most exciting of places to people that travel to new countries on the reg, but we rarely see each other and needed some time away. Although we live together, we have totally separate schedules. UGH. So, we figured we'd plan a trip that was within the US, perfect warm weather, and that would have plllllenty to eat while we just lounged. We decided on Cali and made sure to show up with literally ZERO plans. We spent most of the days sleeping in, exploring the city, getting massages + doing yoga. It was perfect! And I can honestly say I don't remember the last time I belly laughed that much over absolute nonsense. Such a perf vaca <3
SO- to summarize. Cali is great. LA is basically the Vegan capital of the world. And planning a trip to just chill out once and a while is always a good idea. OH and should we talk about this Chia pudding? To be honest, there is not much to say and theres not enough words to explain how satisfying this simple dessert is. V versatile as well! Give it a go (especially if you ate a little bit too much chocolate for vday). Enjoy! xx Sam
I N G R E D I E N T S:
- 1 can of Light Coconut Milk
- 1/4 cup of Chia seeds
- 1 tsp of pure maple syrup (or any sweetner of choice)
- 1 tsp of vanilla
- Dash of cinnamon
- Bananas & coconut whip to serve
QUICK + SIMPLE: In a jar or bowl, mix/whish the coconut milk with vanilla, syrup, and cinnamon so there are no lumps and its a smooooth liquid. Then, add the chia seeds and mix to combine well. Make sure no chia clumps are stuck at the bottom! Place in the fridge and let it chill for about 4 hours, or overnight! If you remember, mix once or twice while it's chilliiiiin.
When ready to serve, slice up some bananas and some coconut whip. Make "parfait style" or mix all together. Optional but I added some coconut flakes to mine as well. YUMMMM (and guilt free!)
