a healthy spin on your classic quesadilla
Hi there! Excited to be back and sharing a ton of recipes again! Does anyone have any suggestions on dishes I should make? If so, please let me know! I love challenging myself to new things- whether they come out good or not. Recipe testing FTW!
In case you were a bit confused as to what goes into this hummus & veggie quesadilla, I'll start by saying that it's totally vegan. No dairy required, and it's JUST as good. Even better! The flavors you get by adding a jalapeno hummus [rather than the staple cheese], are mind blowing. I've actually made this twice in 2 days because we are obsessed.
Quesadillas are another food & dish I missed making when going vegan(ish). I couldn't find ANY replacements, and I didn't want to rely on some fake cheese alternative. They always bug my stomach, and I have yet to find one that has pretty clean with only plant based ingredients. I love my new plant based lifestyle, and I wasn't about to go back on what I eat justtttt for a darn cheese quesadilla. NO WAY! SO, after much research, thank goodness I found this fantastic idea on adding hummus to your tortillas, to make a loaded quesadilla without the cheese. And not to mention, a much healthier alternative. Which to me means - I can happily eat all 8 of these bad boys and not feel bloated and sick and greasy... just kindaaaa comatose.
IF however you love yourself some cheese, treat yourself & give my original Veggie Quesadillas a try. If not, try these new & improved ones!! You'll love them, but dunked in guac/avocados is a must. :)

I N G R E D I E N T S:
- 8-10 wheat tortillas
- 1 (15oz.) can of black beans, drained & rinsed
- 1 red onion, sliced
- 1 red pepper, seeded & sliced
- 1 tomato, chopped up
- 1/2 cup of fresh or frozen corn (more or less to preference)
- Jalapeno hummus (or whatever hummus ya like)
- Handful of fresh spinach
- Crushed chili pepper flakes, chili powder, + oregano, to season
- Salt & Pepper to taste!
- SMASHED Avocado to serve :)
PREPARE: Begin by dicing up all your veggies & set aside. Drain your beanzzz and smash the avocado with a bit of salt and pepper. AND get all your spices ready to go.
COOK: In a large frying pan over medium heat, add a splash of olive oil. Once hot, toss in your diced red onion + red pepper. Sprinkle a bit of each seasoning lightly (or more if you want it extra spicy!), plus a bit of salt & pepper. Cook for just about 5 minutes, and then add in the corn. Cook for another 3-4 minutes, til everything is cooked through and softened. Chuck in your tomato, and cook for another 5ish minutes. It'll begin to break down and blend into your veggies as if you added a chunky sauce! Toss in the spinach and cook until wilted. MMMm, now kill the heat.
QUESADILLA TIME!: Take out your cast iron skillet! If you don't have one, no worries! Any frying pan will do, but you'll just need to grease the bottom to prevent sticking. If your cast iron is seasoned well, you won't need to add any oil. Heat over medium heat. While that's getting hot, take out a tortilla and smear half of it with hummus. Top that part with a small portion of veggie mixture + a generous spoonful of black beans. Once reaaaally hot (like sitting on the heat for 5-7 minutes), gently place your tortilla w/ vegs, and fold in half. Cook for a few minutes on each side while lightly pressing with a spatula, until crispy & golden. It'll cook quick so watch carefully! Remove from heat- eat- and repeat :)
