homemade & EASY!
Happy Monday! I am so excited to share the EASIEST & fool proof recipe for a 2 ingredient coconut yogurt (and it is not the Minimalist Baker one). I know- we've all been there and we've all tried it. My results weren't as good as hers, which is why I decided to try some other recipes out and get the perfect yogurt down. No hate on Dana @ Minimalist Baker though! She's still the best!
I haven't posted a new recipe alllllll last week, and I've got a ton of posts lined up. But I've been super busy because... My sister just gave birth to the most *perfect* baby boy! I'm now an Auntie to a little cutie named Hunter, and my entire last week was devoted to being at the hospital with him, or gushing over the stream of photos coming in from my entire family back on Long Island. He is so precious and I am so in love! <3
Anyway, being a busy bee, this coconut yogurt recipe came to me at the best timing. It is so darn easy, and I can't believe I didn't think of it sooner! If you're familiar with Minimalist Baker's version, you'd normally add an entire can of coconut milk with ~2 Probiotic capsules. However, a lot of people we having issues with it solidifying and firming up, but this recipe is guaranteed to thicken! No troubleshooting required.
After SO MUCH RESEARCH, and SO MANY FAILED attempts, I am SO thrilled to finally have an easy recipe. Filled with probiotics & totes sugar free- and vegan friendly! No additives, and no yogurt maker needed. Can this get any easier?! Enjoy! xx Sam.
I N G R E D E I N T S:
- 1 can of full fat coconut milk (I use 365 Whole Foods brand)
- 2 LIVE [vegan friendly] Probiotic capsules
PREP: You want to make sure to pop your can of coconut milk in the fridge overnight. The coconut cream should be solidified. Sterilize a bowl/ glass jar before using.
MAKING YOGURT: I find it easiest to do this in a bowl. Scoop out only the coconut cream from the top of the can in a bowl. NOW, if you want a thick, Greek yogurt consistency, use only the coconut fat. For a thinner yogurt, add some of the coconut water from the bottom of the jar, to the coconut cream. All to your preference! Once your coconut cream comes to room temp, it'll be easier to manage. Crack open your capsules and add the probiotic powder to the coconut yogurt. With a wooden spoon or rubber spatula (DO NOT use metal), mix & fold in very well to combine evenly. With a cheesecloth or dish towel, cover and place in a dark oven (or warm dark spot), for 12-24 hours. The longer you leave it, the more tangy it'll be!
EATING YOGURT!: After it's been sitting, take out and taste. If it tastes REALLY off, or discolored/smells funky, toss it out. It should taste like a slightly tangy yogurt! Yum! Pour it into a clean glass jar and pop in the fridge. It will harden as it cools off completely. Enjoy :)
