Friiiiiiiday is HERE! And I couldn't be more excited for the weeeekend! Going back home to Long Island, and my mom + pup are flying into town. Christmas shopping and possibly (most likely) karaoke is in the cards.
So this hasselback potato situation going on is maybe one of my newest favs. I've seen way too many posts and recipes with some sort of hasselback something or another, and they always looks so intimidating. I for sure though this was one of those things that you needed super knife skills for, or maybe some special kitchen magic to make your potatoes turn so purttty.
Well I'm here to tell you, it's SOOOO easy. Easy enough for me to make two nights in a row when I got in late, and if you don't mind the long baking time, you're in bizzzz! Pop em in, do some cleaning- maybe relax on the couch for a bit, take them out to brush again and cook em til crisp. There's like no effort required and I think that's why I love them so much.
OH and this dressing is possibly everything you need and then some. I've had yet to find a Caesar dressing recipe that didn't require the long process of roasting an entire head of garlic, or soaking my cashews before blending. Expensive and just a no. SO, when I found this recipe and I had everything at my fingertips already AND it took maybe 3 minutes to make, I was one happy gal! Check em out guyssss! Xx Sam
I N G R E D I E N T S:
- 5-6 russet potatoes, cleaned & scrubbed really well
- Olive oil!
- Salt & Pepper, to sprinkle
POTATOES!: Preheat the oven to 425 degrees fahrenheit. We're going to slice the potatoes almost all the way through (approx. 1/8- 1/4 inch slices), but they should still be intact at the bottom . To prevent the knife cutting entirely through, I placed the potato between two chopsticks- alternatively you can use two wooden spoons. In a casserole dish, brush the bottom with olive oil + a spring of salt & pepper. Place the potatoes in the dish and brush each with a small bit of olive oil, and top with some more S&P. Cook for 30 minutes, take out to brush each with more oil, and cook for an additional 30-4o minutes until crisp and tender!
HEMP H E A R T CAESAR DRESSING
- 1/3 cup of hemp hearts
- 1/3 cup of water
- 2 Tbs of fresh squeezed lemon juice
- 1 Tbs of unsweetened almond milk
- 1/2 Tbs apple cider vinegar
- 1 Tbs of dijon mustard
- 1 clove of garlic
- 1/4 tsp of sea salt
- 1/4 tsp of pepper
BLENNNND: In a high speed blender, add all ingredients and blend until smooth. Smother potatoes in this super easy and extremely flavorful [effortless] dressing.
*Notes: This caesar dressing recipe was taken from The Glowing Fridge! It's so so good tossed with a salad, and tastes weirdly like the real real- but waaaay healthier! Just. As. Good.
