This HOT new soup recipe, is just what you need to get you through this blizzard!
Happy Monday, guys! Geeeez it's been a while since I've posted a recipe, but I'm back! And excited to share some *new* dishes with you :) If you don't follow me on Instagram, or read my "Reviews" page, you probably didn't know I've been in Tulum, just loving life! Seriously- all the best food & sunshine & vegan everything. To contradict a bit.. Also thee freshest seafood EVER.
So, who's looking forward to snow tomorrow?! I don't know about anyone else, but I personally love a good snow storm. It may have to do with the fact that living in a city means you don't exactly have to drive or shovel, and I just get to sit back & enjoy the quiet snowfall. It's so peaceful and so pretty. BUT with a ton of snow, comes me wishing all night for a snow day. I love a good reason to be cozied up in bed, binging on Netflix. OH, and with a nice lil' pint of dairy free Ben & Jerrys. Ummmmm have you had yet? It's SERIOUSLY THE BEST. Like, just as creamy, fudgey, gooooey- but made with almond milk. Yeahp. Bought some and was gone within 24 hours. Wooooops!
Anyways, my first weekend back in the city after my vacation meant a TON of cooking & recipe testing. My entire apartment was one big test kitchen, and poor Ryan has to sit in the middle of the mess as always (soooorry). But with testing comes a billion of new dishes, that he personally gets to taste test and eat along the way. So win win?
I've recently become obsessed with "Hale & Hearty's" mushroom barley soup, and had to attempt a recreate. To be honest, I don't think I've ever actually had mushroom barley soup, and it's my understanding that it usually contains cream or beef broth. Not this one, guys!!! Totally vegan & totally yummy. AND bonus- it makes a huge batch, so you'll be plenty full through the storm, if you whip up a pot tonight. Talk about perfect timing ;) Enjoy! xx Sam

I N G R E D I E N T S:
- 1 cup of dried barley (measured uncooked)
- 1 dry oz. of Dried Organic Mushroom medley (or any dried mushrooms you can find!)
- 10 oz. package of White mushrooms, diced
- 1 yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3/4 cup of peas
- 2 cloves of garlic, minced
- 2 tsp of tomato paste
- 6 cups of veggie broth
- 1/2 cup of white cooking wine
- 2 Tbs of organic all purpose flour
- 1/4- 1/2 cup of almond milk
- dash of soy sauce
- Olive oil (for sauteing!)
- Salt & pepper to taste
PREP: SO, the barely takes a bit of time to cook, so cook according to directions. Since there are a lottttt of veggies, start dicing them up and setting aside. Also, add the dried mushrooms to a small bowl and cover with 1 & 1/2 cups of boiling water. They'll need to soak for about 15 minutes.
COOK!: Now that everything is about going, let's get to cookin the soup. In a large pot over medium heat, add a splash of oil. Once hot, add in your white mushrooms, carrots, celery, onion, peas, garlic & tomato paste + a pinch of salt. Cook until all the water has been released from the mushrooms, and veggies are soft.. about 10-15 minutes. Now, drain the dried mushrooms, BUT keep the soaking liquid to the side. Dice those mushrooms a bit and toss them in. Cook for another minute!
MUSHROOMY: Now, add in your flour & toss to coat evenly. Cook for an additional 3-5 minutes, and you'll notice the flour will start to stick to the bottom. This is OK! Pour in your broth, wine, mushroom-y liquid. Bring to a boil, cover (crack the lid open sliiiightly if there is no vent on the lid), and reduce heat to medium low. Cook for 10-15 minutes.
FINISH!: After it's been cooking, add in the cooked barley, stirrrrr & cook for an additional 10 minutes. FINALLY, when heated through, toss in the soy sauce & almond milk- with some salt & pepper to taste. Serve with a huge loaf of bread and enjoy. :)
*Notes: As I mentioned, this makes A LOT of soup. Like, i'll definitely be eating it for a few days! You can probably freeze in batches, and whip it out one night when you don't feel like cooking. I haven't tried, but I hear that's what people do with soup sometimes. OH! And if you love yourself a good mushroom soup, this is a modification of my Wild Mushroom soup. Check it out!
