zeeeee perfect veggie 'sammy'
It's FRIDAY! aaaaaaand Nation Donut Day! The PERFECT excuse to be unhealthy and shove your face with sugary rolls of joy. Why can't everyday be this good?! Any weekend plans?? Looking forward to the gorg weather? I know I sure am, and I'll hopefully will be hitting the beach for the first time this season (Wahoo)!
I am also so so SO excited because Ryan and I are going on a movie date AND getting Chinese for dinner. This is totes the best day EVER.
On another note, this super vegan veggie sandwich. Holy moly. It is good and OH so simple. I mean.. OK so it's not a typical dinner I'd cook or share, but it's totally a great go-to option when you're tired after work and need an easy, but filling bite (Just say NO to frozen dinners!). OR if you are out of leftovers, and need to pack a quick lunch for work. Srsly this is it. Better than the average tuna or egg salad I usually resort to- until now!
I came up with this sandwich when I realllllly wanted to attempt potato salad (which was great! Coming soon ;) ), and needed a “core” to the meal. Since we always just rely on salmon to be that main, Ryan suggested we try something else. Of course I had nearly nothing to work with since I hadn’t been grocery shopping yet for the week (</3), so this was a last minute creation! And I must say- it hit the spot! Mm MMM.. and just think with BBQ season upon us, chuck on some fresh grilled veggies (mouth. is. watering.) and YOU are in action! SHARE WITH ME PLZZZZ.

I N G R E D I E N T S:
- Super fresh loaf of sliced bread
- 1 avocado, sliced
- 1 red onion, sliced
- 1 tomato, sliced
- Bunch of fresh alfalfa sprouts
- Hummus! (I use the Whole foods lemon hummus- MMmm!)
- Salt & Pepper
DELICIOUS SIMPLICITY: Begin by slicing up your veggies & toasting the bread. Then spread on that creamy hummus, and layer the veggies & alfalfa. Sprinkle some salt + pepper- and voila! DONE in minutes! You can totally melt some cheese & add additional vegetables (maybe even some fruit or nuts). GET CREATIVE sandwich lovers!
