Wednesday. I've never been so happy to see a Wednesday! Ever have one of those days, where everything is against you, and you justcan't catch a break? Well, that was my Tuesday and I am happy to wake up to a new day, and be thankful for what today has in store for moi (totally assuming it will be better than yesterday).
SO being that I had such a crumby day, I needed some good Ol fashion [easy] comfort food. And what comforts you more than a hot bowl of ramen noodles?! And not your instant noodles, even though they also have a way of just making you feel better. Maybe because it brings you back to your childhood days? Anyhow, real ramen. BUT easy ramen!
This recipe is one of those super easy meals, loaded with flavor, and a ton of nutrients. My two favorite foodie bonuses! And have ya ever had bok choy? Maybe you've had it in Chinese take out, and never noticed what it was (uhhh like me). It's that big green, leefy veggie, that you can find on any outdoor street stand or cart, down in Chinatown. I swear- people crowd around for this stuff! I made sure to snag mine from Whole Foods so 1) I knew it was organically grown and 2) actually knew I was buying the right thing! Some of these leefy veggies look so alike, I had a 95% chance of buying the wrong product.
SO just to brief you, bok choy is just SO good for you. And ginger too, obv. Bok choy is loaded with natural antioxidants. It's packed with Vitamin A, Vitamin C, Magnese & Zinc. It's also super tasty, and you can totally swap out your 'go-to' green for this, in a dish you cook often. Saute with a little olive oil, salt & pepper, and you have yourself a great GREEN side dish, to go with your favorite meal. All in all, this soup is just one of those "cold killing" meals, that should help kick your immune system into gear when fighting off the nasty common flu. I N G R E D I E N T S:
- Small bunch of scallions, white & green parts chopped
- 2-3 cloves of garlic, minced
- 2 Tbs of fresh ginger, minced
- 2 cups of veggie broth + 2 cups of water
- 1 medium size head of Bok Choy
- 4 oz. of Ramen noodles (these are my fav)
- Salt to taste
- Olive oil to saute
- Sriracha to serve (optional, but yummy!)
- Sesame seeds + red pepper flakes to serve (optional)
PREPARE: Begin by dicing your veggies & set aside separately. When cutting the bok choy, make sure you chop the green parts into little strips, and some of the white stems can be mixed in too.
RAMEN!: In a large pot over medium heat, add a splash of oil. Toss in the garlic, ginger, & scallions BUT save some of the green tops for serving! Cook for just a few minutes, until they become fragrant and begin to soften. Next, add in your broth & water, reduce to simmer & cover. Cook for just about 5 minutes and add in your bok choy. Let the bok choy cook for about 5-7 minutes, until softened. Lastly, add in your Ramen and simmer for an additional 5(ish) minutes- or until your desired noodle preference. Add some Sriracha if you're feeling spiiiiicy. Top with sesame seeds & the rest of green onions & DEVOUR!
*Notes: This soup makes enough for 2 big bowls (generously!). But if you're serving for a few people, just double it! :)
