Brinner: (brin-ner) adj. breakfast eaten at the time in which you eat dinner
Breakfast for dinner. Oh how I love you so much. Who else agrees that breakfast food is up there on your list of favorite things, and without it your heart would be lost? Well, lucky for you, I've perfected the perfect avocado toast- better than anything you'll find at your favorite brunch spot for just around $15 (WAY cheaper in your own kitchen. duh).
If you've never had avo toast, or you've seen it but never ordered it because you weren't really sure it'd fill you up as a whole meal alone- and trust me, I've definitely been there- this is the version for you! With the super thick sliced bread, poached-to-perfection eggs, and a nice heaping scoop of avocado mash, you may or may not be in a food coma. I know it doesn't look like much, but I was stuffed!
When I first started working right outta college, avocado toast (or at least what I thought at the time) was my go to breakfast on the run. I'd buy a regular loaf of sliced bread, a good amount of avocados from the street vendors to last me a week, and some lemon. When I'd get to work, I'd throw the bread in the toaster, mash some avocado on it, and squeeze a little lemon. BAM. That was it. AND it never did do the trick of filling me but hey- that's what people ate, right?
BUT then something amazing happened a year or so later- I saw THIS version all over Instagram and food blogs and on people's plates during brunch in my little neighborhood. How on EARTH did I have it so wrong?!?? Well, luckily those days are over and I have perfected my new favorite 'easy peasy' version. Hope you will be willing to try- you will not regret it. Promise! (& it is as good as it looks ;) )

I N G R E D I E N T S:
- 2 Avocados
- 1 lemon, juiced (more or less depending on how tangy you want it)
- Fresh loaf of bread, sliced into thick sliced
- Eggs, poached
- Crushed red pepper flakes to top!
- Salt & Pepper
EGGS: In a small saucepan over high heat, bring water to a boil. Once boiling, slowly crack in an egg. Let it cook for about 3-5 minutes until white is thoroughly cooked, and inside is gooey. (Check youtube for additional tutorials- endless ways to do this!)
AVOCADO MASH: Scoop and peel your avocados, and put them in a small bowl. Mash well, add lemon juice plus some salt + pepper. Mix to combine well and set aside.
FINISH!: Toast the bread and get ready for the best avocado sammy ever. Once toasty, spread on some mash, a poached egg, a generous amount of red pepper flakes. Take a bite and enjoy the ooey gooey oozing egg pour over the delicious crispy toast.
*Notes: This recipe can make about 6 nice sizes of toast, but it's all depending on how greedy you get when spreading it on the toast. Also, I sometimes prefer it with a little sriracha on top- extra spppppppppicy.
